Tatar Salad

A striking, appetizing salad of bright vegetables and sausage. The Tatar salad in this recipe is fairly calorie-dense — after all, it has sausage, fried potatoes and beets, plus full-fat sour cream and mayonnaise in the dressing. But it all evens out thanks to a balanced makeup: it's high in fiber and usually has plenty of fresh greens. And you can adjust the components to your taste: add fresh celery, green onion, sauerkraut or fresh cabbage, any salad greens, or use lean boiled beef instead of sausage.

    How do you make Tatar salad? Get out beets, carrots, potatoes, fresh cucumber, sausage, mayonnaise, sour cream, and frying oil.

    Peel the beets and cut them into thin strips.

    Heat the sunflower oil and fry the beets, then cover and braise them until done.

    Marinate the carrots, adding apple cider vinegar, khmeli-suneli, and hot pepper. You can also use store-bought Korean carrot salad. Cut the cucumber into thin strips too.

    Peel and rinse the potatoes, cut them into very thin strips, and rinse those several times in running water too. Drain them in a sieve, blot them dry with a paper towel, and fry them in the same skillet until crisp.

    In the center of the salad, put a mound of dressing made from mayonnaise mixed with sour cream. Right at the table, just before eating, all the components of the salad are tossed together with two large forks.
