Sunflower Salad with Corn and Mushrooms

You'll love this pretty little salad! Hearty and delicious! I like to make dishes that are not just tasty but beautiful, too. The way a dish is presented has a lot to do with its "success," especially when it comes to a holiday table. One of my favorite salads in that respect is the Sunflower salad. And that's the recipe I'm going to share with you now.

  • How do you make Sunflower salad with corn and mushrooms? First, boil the carrots until fully done, cool them, and peel them. Finely chop the chicken fillet. Then fry the prepared chicken in oil until fully cooked and season with salt. Next, grate the carrots on a medium grater. Grate the boiled eggs on a medium grater too. Finely chop the canned mushrooms. Cut the peeled onion into rings or half-rings. Layer all the ingredients on a large dish. Start by spreading out an even layer of chicken fillet and coating it with mayonnaise. Next, spread the carrots over the chicken and coat with mayonnaise. Then spread the mushrooms over the carrots and coat that layer with mayonnaise again. Now add the onion, then the eggs, and coat with mayonnaise again. After that, spread the canned corn over the eggs. Arrange the chips around the edge of the salad to make a sort of "daisy." You can also decorate the salad with a "ladybug" made from a small tomato and an olive. Then serve the salad.
  • It's better to make the mayonnaise yourself — it's tastier and better for you. You'll find some good homemade mayonnaise recipes here. As a dressing you can also use sour cream or plain yogurt instead of mayonnaise. Use them on their own or mix them with mayonnaise in any ratio you like — that will cut the calories.
  • Any oil is only healthy up to a certain temperature — its smoke point, at which the oil starts to burn and forms toxic substances, including carcinogens. For how to gauge the frying temperature and choose the best oil for frying — and which ones are better not to use at all — read here.
