Barley Porridge in a Slow Cooker (Made with Water)

Delicious barley porridge made with water in a slow cooker — no fuss at all! Barley porridge cooked with water isn't just a tasty side for meat dishes; it's also a great breakfast. Barley groats are rich in vitamins and carbs, giving you energy for the whole day. On top of that, this porridge is simple and quick to make, and barley is very cheap and swells to nearly five times its volume as it cooks — so this is a real budget dish.

  • Rinse the barley groats well (until the water runs clear) — it's easiest to do this in a colander under running water, to wash away any dust and bits of debris. Let the groats dry, then put them in the dry slow cooker pot and toast them for 7 minutes on the "Fry/Sauté" setting with the lid open, stirring constantly with a wooden spatula.
  • Then pour in the water and add the salt. Run the "Milk Porridge" setting for 35 minutes; in that time the grain should swell fully and absorb all the liquid. Add a pat of butter and let the porridge rest, covered, for another 20 minutes. It comes out especially tasty and a lovely golden color. Serve it with a little butter or sugar, as you like.
