- Let me share my pea soup with bacon. On cold fall evenings, it warms you up and really fills you up. Use whatever broth you like — meat, chicken, or vegetable; you can even use water and it'll still be delicious. The aroma of smoky bacon gives the soup a special touch. For this recipe I suggest using yellow split peas: they don't need soaking and cook much faster than whole peas. To start, prep all the vegetables. Peel and wash the potatoes, carrots, and onion. Rinse the peas a few times until the water runs clear. Cut the potatoes into roughly medium cubes. Set a pot of broth (or water) over the heat and bring to a boil. Add the peas and potatoes to the boiling broth and season with salt. Reduce to medium, cover, and cook for about 30–40 minutes, until the peas are tender. The potatoes cook faster than the peas, so they'll be a little soft; if you'd rather they stay firm, add the peas first and the potatoes a bit later. Meanwhile, make the bacon and the sauté. Cut the bacon into small pieces. Finely chop the onion and carrot (you can grate the carrot). Heat the vegetable oil in a skillet, add the bacon, and fry, stirring, until golden. Spoon the crisp bacon out into a separate bowl. Add the onion and carrot to the oil left from the bacon and sauté until soft. Add the sauté and the bay leaf to the pot with the cooked potatoes. Turn the heat to high. Once it boils, add the bacon and finely chopped herbs — use whatever you like; green onions and dill work great here. Let the soup boil a few more seconds, then take it off the heat and let it rest a while. Serve the pea soup with sour cream, and don't forget a pinch of allspice for flavor. Enjoy!
