Barley Soup
A light, easy-to-make soup! This tasty soup can be made with either vegetable or meat broth. Barley grits give it extra body and a little something different. If you're not watching calories, use 4 tablespoons of grits instead of 2 to make it a bit thicker.

Step 1:
Let's get the soup going by prepping all the ingredients.

Put the chicken wings in a pot and add 2 quarts (2 liters) of water. Cook the chicken for 30 minutes after it comes to a boil, skimming the foam off the surface as it forms.

Rinse the barley grits and add them to the pot with the chicken. Keep simmering the soup for another 30 minutes.

Step 4:
Cut the potatoes into cubes and add them to the soup. Add the salt at this point.

Step 5:
Chop the onion.

Step 6:
Grate the carrot on the fine holes of a grater.

Step 7:
Sauté the onion and carrot in the butter to make a sauté base.

Step 8:
Add the sautéed vegetables to the pot, cook the soup 5 minutes more, and turn off the heat.

The barley soup is ready. Enjoy!
