- Chicken and oatmeal soup is a hearty everyday soup that works well for kids and lighter diets. 1. Gather the ingredients on the list. 2. Start the chicken cooking, covered with a small amount of water. Once it boils, cook uncovered for about 5 minutes, then drain, rinse the chicken and the pot, return everything, cover with fresh water, and put it back on the stove. 3. Soak the oats—it's handy to bring them to halfway done in the microwave. 4. Prep the vegetables: peel and cut the potato into large cubes, and the onion and carrot into small ones. 5. Once the chicken comes to a boil, add the potato and oats. Simmer over low heat until tender. 6. Make a sauté: cook the onion and carrot in the oil. 7.
