Oven-Baked Potato Varenyky
A clever twist on the usual boiled varenyky—try a whole new way to cook them! Oven-baked potato varenyky are one of the best ways to make this dish. After the first bite you'll want to forget about boiling them and make them only this way, playing with spices and add-ins.

- How do you bake potato varenyky in the oven? Use any potato varenyky you like—homemade from your favorite recipe or store-bought. That won't change the flavor of the finished dish much; it only affects the cooking time. Bring the water to a boil over high heat, add a little salt, and drop in the varenyky. Lower the heat to medium and cook for 3–4 minutes, until half done. Then lift them out with a slotted spoon or drain them in a colander. Pour the sour cream into a deep bowl and add salt, a little ground pepper, and any dried herbs (or none at all). The seasonings here can be whatever your family likes. Stir until smooth and set aside. Peel, wash, and dry the onion, then cut it into thin half-rings. Fry it in vegetable oil until golden, stirring now and then so it doesn't burn. Once the onion is done, you're ready to bake. Ceramic crocks work best for baking varenyky in the oven. Pour a teaspoon of vegetable oil into the bottom of each (add a pat of butter too, if you like). Layer in the par-cooked varenyky, alternating them with the fried onion. Once all the varenyky and onion are divided among the crocks, pour the seasoned sour cream over each one. Grate the hard cheese on the large holes of a box grater and sprinkle it generously over each crock. Feel free to add even more—the melted crust is so good you'll never have too much. Bake the varenyky with the cheese and sour cream at 350°F (180°C) for 15 minutes. The sour cream soaks in, finishes cooking them, and turns into a rich, savory sauce, while the cheese melts into a thick, soft cap that coats each varenyk as you lift it from the crock. Serve the baked potato varenyky hot, right in the crocks. Enjoy!
