Easy Cranberry Pie

- Soften the butter in the microwave (or just set it out of the refrigerator about an hour ahead). The key is not to overdo it — it should be soft, not melted — so use the lowest setting or the defrost mode. 2. Crack the eggs into a bowl, add the sugar and the softened butter, and mix everything well. 3. Add the salt and the pre-sifted flour to the same bowl and knead into a smooth dough. 4. Divide the finished dough into four equal parts and put one in the freezer (you'll need it later). 5. Use the other three parts to form the base, pressing the dough into your pan (it's very pliable, so it's easy to work with), then refrigerate it while you make the filling — about half an hour. 6. Wash the cranberries (fresh or frozen both work; if frozen, take them out ahead of time so they thaw at room temperature), drain them in a colander, and purée them with a blender. 7. Stir the sugar and starch into the berry purée. Set it over low heat and cook for a couple of minutes — without letting it boil — until thickened. Remove from the heat and let it cool completely. 8. Take the pan out of the refrigerator and spread the cranberry filling over the base. 9. Take the reserved dough out of the freezer and grate it directly over the berry layer. 10. Bake the pie in an oven preheated to 400°F (200°C) for 35 minutes. Let the finished pie cool to room temperature, then remove it from the pan. Refrigerate for 2 hours, then cut into pieces and serve.
