Cooking method
- Pasta: 1. Mound the flour on a work surface and make a well in the center. Pour the eggs, water, and olive oil into the well. Knead into a smooth, elastic dough, working from the edges toward the center and gradually drawing in the flour. If the dough seems too stiff, hold back some flour; if it's sticky, add a little more. 2. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 1 hour. 3. Lightly flour the work surface. Divide the dough into 2 parts, keeping the one you're not working with covered. 4. Roll a piece of dough out to about 1/25 inch (1 mm) thick. Cut it into strips 1/4–1/3 inch (5–7 mm) wide and 8–12 inches (20–30 cm) long. Lay the pasta on a rack and dry it in the oven on the convection setting at 120°F (50°C) for 20–30 minutes. Then cook it in boiling salted water with 1 tablespoon of olive oil added. Seafood in tomato sauce: 1. Thaw the seafood (mine is already cleaned) and rinse it well. 2. Cut the white part of the leek into rings. 3. Heat olive oil in a skillet, add the garlic cloves cut in half, and fry. 4. Remove and discard the garlic, then add the leek and cook over low heat until translucent. 5. Add the seafood and stir-fry over high heat, stirring constantly, for 3–5 minutes. 6. Add the puréed tomatoes, season lightly with salt and pepper, and let it simmer. Then stir in the parsley. The sauce is ready. 7. You can toss the pasta in the sauce and serve, but I like to spoon the sauce over each plate — it's a matter of taste. Set the table and enjoy your homemade pasta with seafood in tomato sauce!
