Sponge Cake Made in a Pot on the Stovetop

A light, airy sponge cake for a delicious celebration cake! I really love sponge cake made in a pot — it comes out even on every side, wonderfully tender, with soft edges and a perfectly flat top. And for anyone without an oven, this method lets you bake a tasty cake for a special occasion. I make it sometimes at the summer house, whenever there's something to celebrate.     1. Crack the eggs, separating the whites from the yolks. 2. Beat the whites with the sugar until fluffy. 3. Add the yolks and beat again. 4. Sift the flour and fold it into the egg mixture gently, a little at a time. 5. Warm the pot slightly, line the bottom with a few sheets of parchment, and top with a greased sheet. There's no need to grease the sides. 6. Pour in the batter. 7. Cover the pot with a kitchen towel, then put the lid on tightly. Set it over the lowest possible heat, using a heat diffuser (flame tamer) under the pot. 8. Bake until done — 1.5 to 2 hours. Test for doneness with a wooden toothpick. Happy baking!
