Kefir-Dough Vareniki with Onion and Potato
Soft, thin, and incredibly tasty dumplings! We always made vareniki at home with the usual dough — just flour, water, and eggs. Then I came across a recipe for kefir dough, and it turned out even better. I recommend giving these a try.

Cooking method
- Start with the dough. Sift the flour and add the kefir, then stir to combine. Crack in the egg, add salt and a little baking soda. Cover the bowl with a cloth and let the dough rest in the fridge for half an hour. Meanwhile, make the filling. Peel the potatoes and boil them, just as you would for mashed potatoes. Peel and dice the onions, then sauté them in vegetable oil. Stir the onions into the potatoes and mash everything together, seasoning with salt and pepper to taste. Take the dough out of the fridge and roll it into a thin sheet. Cut out rounds and place a spoonful of the potato filling on each. Fold and seal the vareniki, then boil them in salted water. Serve them hot, drizzled with melted butter. Enjoy!
