Cooking method

Cooking time: 20 min
  1. Step 1:

    Step 1

Measure out all the ingredients listed in the recipe. How do you pick good ham? Check the label for soy, starch, and flavorings. Natural ham is made from pork; other meats in the mix aren't ideal. It's handy to buy pre-sliced ham so the slices are uniform in size, shape, and thickness. Or slice it yourself into thin rounds no more than 2-3 mm thick. Thicker slices will crack when you roll them.

  2. Step 2:

    Step 2

Grate any tasty hard cheese on a medium grater - a good Gouda, Edam, or similar.

  3. Step 3:

    Step 3

Put the cheese spreads in the freezer for 20 minutes ahead of time. Once partly frozen, they're easier to grate on a medium grater. Use plain cheese spreads with no add-ins. You can replace them with a firm processed cheese - no need to freeze that, it grates just fine.

  4. Step 4:

    Step 4

Peel the garlic and put the cloves through a press. Use as much garlic as you like - less or more than the recipe calls for.

  5. Step 5:

    Step 5

In a suitably sized bowl, combine the hard cheese, processed cheese, and garlic. Stir in the mayonnaise. You can replace it with plain yogurt or sour cream, or mix mayonnaise and sour cream in equal parts.

  6. Step 6:

    Step 6

    Mix until smooth.

  7. Step 7:

    Step 7

Place 1 tablespoon of filling on the edge of a ham slice.

  8. Step 8:

    Step 8

Roll the ham into a tube. Shape the rest of the roll-ups the same way. Set them seam-side down on a platter. To keep them from unrolling, tie them with strands of green onion or secure them with toothpicks. Chill the appetizer in the fridge for 10 minutes to let the flavors set. Enjoy!

  • This cold appetizer is great to put out for guests while they wait for the main hot dish. They come out delicate, savory, and elegant.
  • You can replace the hard cheese with two hard-boiled eggs: grate them on a medium grater and mix with the mayonnaise and cheese spread.
  • Before serving, garnish the platter with herbs (curly parsley or dill sprigs), lettuce leaves, bell pepper rings, olives, lemon slices, or gherkins. Or dip the ends of the tubes in mayonnaise sauce and then in grated egg yolk. I drizzled mine with cheese sauce. How to make it? See the recipes here.
  • I strongly recommend making the mayonnaise yourself - it'll be tastier and better for you! You'll find homemade mayonnaise recipes here.
