  • Gather your ingredients — they're simple and easy to find: beef, daikon-type radish, carrot, onion, eggs, mayonnaise, sour cream, and salt to taste. You can swap the beef for another meat, such as pork, which is more tender but richer in calories. Rinse the beef and set it to simmer in salted water; a boneless cut works best. To speed things up, cut it into small pieces before cooking. Simmer until fully cooked, about 40 minutes depending on the size and amount of meat. Meanwhile, hard-boil the eggs. While the meat cooks, prep the rest. Go with a daikon-type radish — it's milder and less bitter than black radish. Rinse, peel, and grate it. To soften the radish's bite, add one fresh carrot for a touch of natural sweetness; rinse, peel, and grate it the same way. For a fancier look, you can grate the radish and carrot on a julienne (Korean-salad) grater or cut them into thin matchsticks, but that's optional. Peel the onion and slice it into thin half-rings or small dice. Cool the cooked beef and cut it into small cubes. Combine everything — beef, radish, carrot, and onion — in a salad bowl. Salt to taste, keeping in mind which dressing you'll use: if it's just mayonnaise, go easy on the salt. You can use mayonnaise and sour cream in equal parts — the sour cream tones down the sharpness and makes it taste milder. Or use only sour cream, in which case add a bit more salt. Cool, peel, and slice the hard-boiled eggs into orange-segment-shaped wedges, and arrange them on top of the salad. Finish with a sprinkle of chopped fresh herbs and serve. Enjoy!
