Oven-Roasted Rabbit and Potatoes in a Baking Bag

A delicious, special dish — perfect for any celebration. Serve it with light vegetable salads and a spicy condiment or two. Tomato juice pairs beautifully.

Cooking method

    Gather all your ingredients and let's get started.

    Cut the front and hind legs off the rabbit carcass and trim out the meatier sections. You can use the neck, too.

    Grind the bay leaves to a powder in a spice grinder.

    Crush the coriander in a mortar.

    Cut the onions lengthwise into wide wedges.

    Put the rabbit pieces in a deep bowl and coat them with the mayonnaise. Season with salt and pepper to taste and add the ground bay leaf and coriander. Let it marinate for at least half an hour.

    Then sprinkle each piece of meat with paprika.

    Arrange the prepared meat in a baking bag, alternating with the onion wedges. Tie the bag tightly and pierce it evenly all over with a thick needle so steam can escape and the bag won't burst.

    Set the bag on a baking sheet. To round out the dish, I scatter parboiled potatoes around the bag on the sheet. Place the sheet in an oven preheated to 400°F (200°C) and bake for 70 to 90 minutes. If you're using meat from a young rabbit, 60 minutes is enough.

    When everything's done, spread the potatoes on a large platter and arrange the pieces of meat on top. Scatter over your favorite herbs or some slivered red onion. The dish will look as appetizing as it is elegant.

  • Rabbit meat is on the lean, dry side — it's a lot like chicken breast — but made this way, you'll see it can turn out wonderfully tender.
