Step-by-step cooking
Step 1:
Prepare the ingredients. To make beef heart soup, we will need: beef heart, potatoes, onions, carrots, tomato paste, bay leaf, vegetable oil for frying, ground black pepper and salt.
Step 2:
Peel potatoes. Cut the potatoes into cubes.
Step 3:
Peel and grate the carrots on a coarse or medium grater.
Step 4:
Pour clean water into a saucepan, put a whole onion, put it on fire and bring to a boil. Some recipes say that the heart can be boiled in the same water (or rather broth) in which it was cooked. But it seems to me that this is not quite right, since it is difficult to get to some ducts in the heart, so when cooking, the broth may darken from the remnants of blood. Therefore, I prefer to drain the broth from the heart, and cook the soup on clean water.
Step 5:
Rinse the rice thoroughly.
Step 6:
Put potatoes and rice in the boiling broth. Add bay leaf. Bring to a boil again and cook over medium heat for about 15 minutes.
Step 7:
Wash beef heart thoroughly, soak in cold water for 30 minutes and rinse again. Boil the heart in salted water with the addition of allspice for about 1.5 hours until tender. Remove the heart from the broth and cut into cubes.
Step 8:
Heat the vegetable oil in a frying pan and fry the pieces of beef heart for about 5 minutes.
Step 9:
Add carrots to the heart. Fry everything together for another 2-3 minutes.
Step 10:
Add tomato paste.
Step 11:
Fry everything together for another 2-3 minutes.
Step 12:
Put the fried beef heart with carrots in the soup. Cook everything together for another 5-7 minutes. Season the soup with salt and pepper.
Step 13:
Remove the pan from the heat and let the soup stand under the lid for 10-15 minutes.
Step 14:
Then pour the soup on plates. Bon appetit!
