Raspberry Confiture

Blend the cleaned raspberries into a smooth, uniform purée with a blender.

Push the berry purée through a fine sieve to get rid of all those little raspberry seeds.

Squeeze half a lemon into the purée.

Pour the raspberry mixture into a cooking pot, stir in the sugar, and set it on the stove.

Boil the mixture for 5 minutes, skimming off any foam that rises.

What you've got now isn't quite confiture yet, but it's close. Let it cool overnight in the refrigerator.

In the morning, take it out and boil it again — same as before: high heat, 5 minutes. Once it's boiled, turn off the heat. The hard part is behind you.

Pour the raspberry confiture into sterilized jars and seal them. Let the jars cool upside down so the lids stay put. Once cooled, move them to a cool, dark place to store.
