Forshmak with Cheese (Chopped Herring Spread)
An appetizing starter for your holiday table! Forshmak will be the star of your celebration — beyond its winning mix of ingredients, it looks beautiful and inviting too. Your guests will appreciate both the dish and the effort. In the classic recipe everything is ground to a paste, but here I suggest dicing the ingredients for a prettier presentation, plus adding cheese.

- Prep the herring: gut it, remove the skin, trim off the fins and head, and pull out as many bones as you can. 2. Hard-boil the eggs, let them cool, peel, and grate them. 3. Cut the prepped herring into small cubes. Peel the onion and dice it finely. Wash the apple, core it, and dice it to match the other ingredients. 4. Grate the cheese, rinse the dill, and chop it with a sharp knife. 5. Combine all the ingredients in a deep bowl, add the red caviar and softened butter, and mix. Spoon the forshmak into a serving bowl, garnish with red caviar, and bring it to the table. Enjoy this fit-for-royalty flavor!
