Azerbaijani Chicken Bozartma
A national Azerbaijani dish — a delicious chicken soup! Bozartma comes out fairly rich and hearty. If you'd like to cut the fat, just remove the skin and excess fat from the thighs. There are countless versions of this dish — with carrots, bell peppers, prunes, tomatoes, cherry plums, and much more. This is the basic recipe, so feel free to experiment however you like.

Step 1:
Gather your ingredients.

Cut the onion into half-moons.

In a Dutch oven or deep skillet, melt the butter and sauté the onion until translucent.

Cut the chicken thighs in half and add them to the pot with the onion. Fry together for about 5 minutes.

Peel the potatoes and cut them into large pieces.

Add the potatoes to the pot.

Add the bay leaves. Season with salt and pepper and stir. Pour in 2 liters of hot water and bring to a boil. Lower the heat and cook, covered, for about 25 more minutes.

Wash and chop the herbs. Let the finished soup rest for 5–7 minutes, ladle it into bowls, and sprinkle with the chopped herbs.
