Pumpkin Smoothie
A delicious pumpkin-and-apricot yogurt smoothie. This summery pumpkin smoothie with fresh apricots is an incredibly tasty drink. It's built on a base of drinkable strawberry yogurt — serve it right after blending, with a sprig of mint for aroma.

Step 1:
For a pumpkin smoothie, grab some fresh or frozen pumpkin (I'm using freshly frozen here), a drinkable fruit yogurt, and some fruit — in this case fresh apricots. It's summer, after all, so make the most of seasonal fruit.

Rinse the apricots well under running water and pat them dry with a paper towel. Pick ripe, soft ones — you'll need 2 apricots for 2 servings.

My pumpkin is frozen in cubes. If yours is whole, peel it and cut it into pieces that are easy to steam or quickly cook. I prefer to cook the pumpkin until soft — it tastes better that way. I do it in the microwave: just 3–4 minutes on high, and the pumpkin turns soft and ready to use.

You could just cut everything into small pieces and stir in the yogurt — a fine option if you like a chunky texture. But we're used to smoothies being smooth, so grab a blender and put the softened pumpkin into the jar first.

Pit the apricots and add them to the blender jar with the pumpkin.

Add the sweetened drinkable yogurt.

If your yogurt is unsweetened, add a little sugar if you like. Mine was strawberry yogurt, so there was no need to sweeten it further.

That's it — just blend everything until smooth. I started on low speed, then turned it up and blended a bit more until it was frothy.

And there you have it — a great pumpkin smoothie! I served it as an afternoon snack, and my husband and I both loved it. Give it a try!
- Pumpkin smoothies are usually made with a boldly flavored fruit — pear, apple, or orange. In this recipe, apricots go in with the pumpkin. For the base, you can use kefir, milk, or yogurt; a splash of water helps if the drink comes out too thick.
