Quail Egg Canapés on Skewers

  • Gather everything you need for these tasty canapés. Take slices of rye bread and a small round cutter — a shot glass, a little metal mold, or anything similar of small diameter. Press out rounds from the bread, then toast the rounds in the oven until golden. Pull the crisp rounds out and let them cool to room temperature. Meanwhile, make the spread: grate the cheese on the fine side of a grater, add a little mayonnaise, and stir to combine. Wash the bell pepper, remove the stem and seeds, and cut 10 small oblong sticks. Hard-boil the quail eggs, then peel them. Now assemble: take a crisp golden bread round, spread on some of the cheese mixture, and set a quail egg on top. Secure everything with a skewer, and tuck a stick of bell pepper into the spread next to the egg. Repeat with the rest. If your oven has no toast setting, you can crisp the bread rounds in a regular toaster or in a dry skillet (no oil). If you like, sprinkle the cheese spread with a little chopped fresh herbs or ground black pepper for an even brighter, more festive look. Canapés are essentially mini open-faced sandwiches, small enough to eat in one bite. Each one usually weighs no more than 80 grams (most are 10–30 grams). They're a classic for a buffet or party and go perfectly with light cocktails and wine.
