Hot Cocoa with Whipped Cream and Zefir

    Gather all the ingredients. Choose a good-quality cocoa powder, since it sets the flavor of the drink. Use whole milk, at least 3.2% fat. Use heavy cream too, so it whips well. Chill the cream in the fridge before you start, and to speed up whipping, chill the bowl and beaters as well.

    Cut the zefir into small cubes with a knife. Vanilla or crème-brûlée zefir works, but white shades are best so it blends into one even color with the whipped cream. You can also use white marshmallows instead.

    Pour the chilled heavy cream into a chilled bowl and whip it to stiff peaks, starting on low speed and gradually working up to high. Use a bowl with high sides so the cream doesn't splatter.

    Gently fold the diced zefir into the stiffly whipped cream. Refrigerate this cream-and-zefir mixture while you make the cocoa — it should stay cold.

    Pour the whole milk into a saucepan, add the cocoa powder, and set it over medium heat. Whisking constantly, bring it to a boil. As soon as it boils, stir in the condensed milk, whisking quickly until it fully dissolves, then take the pan off the heat.

    Pour the hot sweet cocoa into large mugs right away, top with the cold cream-and-zefir mixture, and garnish however you like — a dusting of cocoa powder is nice.

  • For a kid-friendly version, swap the condensed milk for flavored syrup and use colored flavored zefir instead of the classic kind — that makes the cocoa more colorful.
