Honey Nut Brittle (Grillage)
A childhood-favorite candy you can make with your own hands. So good! Who doesn't love nut brittle? The good news is you can make it yourself at home, and the recipe couldn't be simpler. The main thing is to stock up on a jar of honey and an assortment of nuts — peanuts, almonds, hazelnuts, walnuts. I even read in one cookbook that you can add sesame seeds to the mix.

Step 1:
To make this treat, start by combining the sugar and honey.

It's best to use runny honey. Stir the sugar into it, pour the mixture into a saucepan, and set it over the heat. Bring it to a boil — you'll have a syrup.

Chop the nuts.

Toast them in a dry skillet, without any oil.

Add the nuts to the honey syrup. Stir them in and let it simmer over low heat for 10–15 minutes.

Meanwhile, grease a baking sheet with a little oil. Spread the honey-and-nut mixture over it and smooth the surface. Set it aside to cool.
- Once it has cooled, cut it into whatever shapes you like — squares, diamonds, rectangles, and so on. The shape won't change the flavor. It's a one-of-a-kind treat, especially with a mug of your favorite tea or coffee. Enjoy!
