Cooking method
-
Step 1:
How do you make impressive red fish canapés on skewers with cream cheese? First, gather the ingredients on the list. You can use cream cheese plain or with add-ins to your taste, or swap it for processed cheese or any other soft cheese you like.
-
Step 2:
Freeze the red fish slightly, peel off the skin, and cut it into squares about ¾ inch on a side and about ½ inch thick.
-
Step 3:
Wash and dry the tomatoes. Cut the top off each cherry tomato. With a tea or coffee spoon, carefully scoop out the flesh, trying not to damage the walls. To make it easier, you can first cut around the flesh with a knife.
-
Step 4:
Make the filling for the tomatoes. Wash, dry, and finely chop the dill.
-
Step 5:
In a bowl, combine the cream cheese, dill, salt, and pepper. The soft cheese should be at room temperature, so take it out of the fridge ahead of time.
-
Step 6:
Mix everything until smooth. Watch the consistency — if the filling comes out too stiff, you can thin it with sour cream or cream to a softer (but not runny) consistency. Transfer the cheese filling to a piping bag with a large tip.
-
Step 7:
Pipe the cream cheese filling into the cherry tomatoes. You can also use an ordinary teaspoon.
-
Step 8:
Assemble the canapés. Set a stuffed cherry tomato on each piece of fish. Pierce the stack with a skewer from top to bottom.
-
Step 9:
For extra stability, you can add cucumber rounds at the base. Garnish the canapés with fresh herbs and serve. Enjoy!
- Choose tomatoes that are juicy but firm. Soft ones don't hold their shape well; as you cut and prepare them they'll fall apart into a shapeless mush and spoil the look of the dish.
- Any cheese works for this dish — hard, semi-hard, or soft like mozzarella. The main thing is that it's tasty, good quality, free of milk-fat substitutes, and melts well.
- Since everyone's tolerance for saltiness, sweetness, bitterness, sharpness, acidity, and heat is different, always add spices and seasonings to your own taste! If you're using a particular seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
