Savoy Cabbage Rolls Simmered on the Stovetop

  • Savoy cabbage has twice the minerals and vitamins of regular green cabbage, so I really recommend making cabbage rolls with it using this recipe. Separate the cabbage into leaves and boil them in lightly salted boiling water. If you can't pull the head apart into individual leaves, boil the whole head and the leaves will come away on their own. Cut the thick, tough rib out of each leaf. Chop the peeled onion. Peel the carrot and grate it on the coarse side of a box grater. In ghee, first sauté just the onion, then add the carrot. Mix the ground meat with the carrot, onion, and breadcrumbs, and add the broth. To make the rolls roughly equal in size, you can divide the meat mixture into portions ahead of time. This amount of ingredients makes about fifteen rolls. Wrap the filling in the leaves and brown each roll in two tablespoons of ghee until golden. Then make the braising sauce: chop an onion and grate a carrot on the coarse grater, and sauté the mixture. Take a large pot to braise the rolls in. Spread the carrot and onion over the bottom and add tomato paste to coat the vegetables. Season with salt and pepper to taste. Lay the browned rolls in the pot and braise everything together for about half an hour. A couple of minutes before they're done, add chopped dill to the pot. To serve, drizzle the rolls with a sauce of sour cream (or cream) stirred together with minced garlic; add a little salt if needed. Serve the Savoy cabbage rolls hot, with the sauce spooned over them.
