Antonovka Apple Jam for Winter

Cover the apples with the sugar, pour in the water, and bring to a boil over low heat. I even cover the pot at this stage so the apple slices cook evenly—otherwise some tend to shrivel and turn tough. But it's just as important not to overcook them, so they don't turn to mush—Antonovka has a delicate texture. So aim for the "happy medium."

Once the apples come to a boil, take them off the heat and let them cool completely. Repeat this boil-and-cool three times; on the last cook, bring the jam to full doneness.

The jam is done when a drop of it holds its shape on a dry surface without running. Cool the Antonovka jam and seal it in dry jars—you don't have to sterilize them.
