Plum jam with a pleasant sourness and chocolate notes! Little sugar is put into this jam - only half of the volume of fruit, so the whole taste is given by the fruits themselves and cocoa powder. Depending on its quantity, you can vary the chocolate saturation and color.

    We remove the bones from the plums. We put it in a bowl in which the jam will be cooked. We weigh the resulting billet.

    Next, you need to measure out half of the total amount of sugar and fill the plum with it. We leave the fruits for a few hours so that the juice comes out.

    The sugar should completely dissolve, you can help it by stirring the mass from time to time. That's how much juice came out of my plums.

    We put our basin on the fire and start cooking. It is not necessary to make a large fire, it is better to make an average heating, the jam can burn.

    While the plums are boiling, add cocoa and vanilla sugar to the remaining sugar. Stir it up.

    In the boiling mass, we pour the remains of sugar mixed with cocoa. Mix well.

    Reduce the heat and cook the jam for about 40 minutes, stirring all the time and removing the foam from the surface. Make sure that the jam does not burn!

    Hot ready-made jam is poured into prepared jars and closed with lids, or rolled under iron ones. We prepare the jars as follows: either keep them steamed or calcined in a hot oven.

Since jam is brewed with a small amount of sugar, it is poorly stored, so it is better to roll it up under iron lids and keep it in a cold place.
The jam tastes sour, with a subtle hint of chocolate. If you add more cocoa, the taste will be brighter.
It is better to take a plum that is not very sour, there is still little sugar. Or add more sugar if your fruits are not sweet.
If you want to experiment, you can put butter in the jam, it will give creaminess and stringiness. Instead of cocoa, you can put chocolate, it will be even tastier. You can also add nuts.
