Amber Apple Slice Jam
Thick, golden, translucent—simply scrumptious! Make this amber jam from fresh apple slices. It's a delicious, beautiful treat: the fruit comes out a delicate, see-through color, as if carved from real amber. Serve it with tea, or use it to decorate cakes and pastries.

Step 1:
How do you make amber apple jam? Gather your ingredients. Pick apples to your taste—sweet or tart. Tart ones need more sugar, sweet ones less. The main thing is that the fruit be firm and unblemished.

Wash the apples well and pat them dry, or let them air-dry.

Cut the apples in half, then into slices, and remove the cores. To help them keep their shape in the jam, it's best not to peel them. If the shape doesn't matter to you, you can peel them.

Put the prepared apple slices in a pot and toss them with the sugar (use half the amount or less). Refrigerate them for 12–14 hours, ideally overnight.

By then the apples will have released their juice. Take them out of the fridge and give them a shake. Transfer the apples to a wide, deep pot (or a preserving basin), set it over the heat, and bring it to a boil. Add the remaining sugar and cook until it dissolves, shaking the jam constantly to nudge the floating slices down into the syrup. After 5 minutes, turn off the heat and let the jam cool. Be careful not to damage the slices—shake the jam, don't stir it.

Bring the jam back to a boil and cook over low heat until done—until the syrup thickens and all the apple slices are candied. Add ground cinnamon and a few whole cloves to taste (optional).
