Georgian Khinkali with Hot-Water Dough and Meat Filling

Step 1:
Gather your ingredients and seasonings for these delicious, juicy Georgian khinkali.

Pour 250 ml of boiling water into a large bowl.

Add 1 teaspoon of salt and 3 tablespoons of vegetable oil to the bowl.

Add most of the 600 grams of sifted flour to the bowl and stir it together.

Step 5:
Crack in one egg.

Step 6:
Add the rest of the flour and knead the dough.

Step 7:
Keep kneading the dough well in the bowl by hand.

Step 8:
Turn the dough out onto the counter and keep kneading for about 15 minutes, then gather it into a ball and put it in a plastic bag for half an hour.

Put 550–600 grams of mixed ground meat in a deep bowl.

Step 10:
Finely chop one onion.

Add the chopped onion to the meat, then add 2 pressed garlic cloves, red and black pepper, and salt to taste.

Chop the cilantro as finely as you can, to taste.

Step 13:
Add the chopped cilantro to the bowl, then pour in 400 ml of beef broth.

Mix everything together well, then refrigerate the filling for 30 minutes to let it rest and soak up the seasonings.

After the rest, divide the dough into two parts and roll each into a small log.

Dust each log with flour and cut it into evenly sized pieces.

Roll each piece into a thin round and place a tablespoon of the filling in the center.

Lift the free edges of the round up over the filling and gather them.

Pinch the pleats together firmly at the top to form each khinkali.

Bring a pot of salted water to a boil. Stir the water into a swirl and gently lower in the khinkali.

Once the water returns to a boil, cook the khinkali for 5–7 minutes, until done.

Transfer the cooked khinkali to a plate.
