    Mix one teaspoon of brown sugar with two teaspoons of mustard, this sauce will need to be applied on top of the pork and it allows a sweet crispy crust to form during baking.

    Let the sugar dissolve a little in the mustard and open a can of canned pineapples. In principle, under mustard sauce, you can bake not only smoked pork, but for example pickled, but then the sauce can be made sharper, for example 250 ml brown sugar 30 ml vinegar or apple cider vinegar 100 ml tomato sauce 100 ml of cream 1/2 cup dijon mustard

    The cooled pork is stuffed with pineapple slices on top and liberally lubricated on all sides with sweet mustard sauce. You can also use rings of canned pineapples, which you can simply put on top of the pork.

    Put the meat to bake in the oven for 30-40 minutes at a temperature of 180 degrees. If there is a grill mode, then it will take less time to create a crispy appetizing crust. Remove pork from the oven and cut into thin slices. I usually serve with baked vegetables such as turnips, potatoes, carrots and bell peppers. This smoked pork has a delicate and juicy taste. A simple way of cooking, and in the end it turns out a great festive dinner!

Hamburger fillet (Hamborgarhryggur) is popular in many Scandinavian countries and is irreplaceable for many at Christmas. Hamburger loin is a salted-smoked pork loin - a Danish tradition that came to Iceland a long time ago, where I got acquainted with this recipe.

Fillets are usually boiled, and it is an old tradition in Iceland to cook it in red wine. It can be boiled in water, a mixture of water or pure red wine. To be honest, red wine does not change the taste qualities of the base much, but it gives a stronger taste. It is best to put the fillet in a saucepan, boil for about 15-30 minutes, and then let it cool down a little in the broth.

After cooking, the meat is baked in the oven under a mustard-sweet sauce until golden brown.
