Individual "Herring Under a Fur Coat" for a Holiday Table

Step 1:
Gather the ingredients and seasonings for this delicious herring under an unusual "fur coat."

Put 10 grams of powdered gelatin in a bowl, pour in 70 ml of cold boiled water, stir, and set it aside to bloom for 15–20 minutes.

Grate 300 grams of cooked potatoes and 300 grams of cooked beets on the fine side of a grater.

Melt the bloomed gelatin in the microwave or over a water bath.

Add 1 tablespoon of mayonnaise to the gelatin.

Stir the gelatin and mayonnaise until smooth.

Add this gelatin mixture to a bowl with the remaining 4 tablespoons of mayonnaise and mix until smooth.

Stir in finely chopped dill to taste.

Add the grated vegetables a little at a time, along with black pepper to taste.

Mix everything together until smooth.

Sprinkle a little finely chopped dill into each mold, then add a layer of the vegetable mixture.

Lay two pieces of herring fillet over the vegetable layer in each mold.

Cover the herring with more vegetable mixture and smooth it into an even layer.

Slice an onion into half-moons, put it in a small bowl, and add 1 teaspoon of salt and 1 teaspoon of sugar.

Pour boiling water over the onion.

Add 1 teaspoon of 70% vinegar essence to the onion, stir, cover with a plate, and set aside for 20 minutes.

Chill the filled molds in the fridge for an hour, or in the freezer for 15 minutes.

When the time's up, arrange the pickled onion with lemon slices on plates, then unmold a salad onto each one and top with finely diced bell pepper, dill, and salmon roe to taste.
