Chicken Soup with Homemade Egg Noodles
An easy-to-make, very tasty soup! It doesn't take long to put together, even though you make the noodles yourself. I'd call these homemade egg noodles "lazy" noodles, since they come together in almost no time—and they turn out delicious!

Step 1:
Gather all the ingredients for chicken soup with homemade egg noodles.

Rinse the chicken leg quarters under running water, remove the skin, cut each in half, and put them in a pot. Cover the chicken with water. Add an unpeeled onion to the pot. Set it over the heat, bring the broth to a boil, skim off the foam, and cook, covered, over low heat for half an hour.

Now make the homemade egg noodles. Crack an egg into a deep bowl, pour in the cooled broth, and beat with a fork.

Gradually work in the sifted flour until you have a thick, sticky dough. Then pinch off small pieces and roll them between your palms into little squiggles.

Shake the excess flour off the noodles and spread them on a cutting board to dry a little.

Peel the onion and dice it. Peel and grate the carrot on the coarse holes. Lightly sauté the prepared vegetables in vegetable oil until soft. You can also cook the onion and carrot in the microwave—just put them on a plate, add a little oil, and microwave for a couple of minutes.

When the broth is ready, lift out the chicken and onion. Pull the chicken meat off the bones and finely chop it.

Peel the potatoes, cut them into small cubes, and add them to the broth. Cook the soup for another 10 minutes.

Then add the chicken meat and the sautéed vegetables to the soup and cook for another 5 minutes.

Next, add the homemade noodles to the pot, season the soup with salt and black pepper, stir gently, and simmer for another 5 minutes.

Ladle the finished soup into bowls and sprinkle with your favorite herbs.
