Step 1:
To prepare a delicious festive jelly, we prepare the necessary products with spices.
Step 2:
We put six hundred and fifty grams of pork, six hundred and fifty grams of beef, two pork legs, a kilogram of beef shanks and one kilogram of goose meat in a volumetric saucepan.
Step 3:
Pour water into the pan so that it completely covers the meat for a couple of centimeters and put the lid on the high heat of the stove.
Step 4:
Remove the foam from the broth boiling in the pan and switch the stove to the lowest heat. The first broth together with the foam can be drained and the water changed if desired.
Step 5:
Add half of the onion head with layers of husks to the pan so that the broth turns golden, half of the carrots and fragrant black pepper peas, then cover with a lid and cook on low heat of the stove.
Step 6:
After three hours of cooking, add one and a half tablespoons of salt to the pan and cover with a lid and continue the cooking process for another hour.
Step 7:
After an hour, we put the cooked meat from the pan into a suitable container and separate it from the bones.
Step 8:
Chop the meat quite finely and put it in a large bowl.
Step 9:
Finely chop five garlic cloves and put them in a bowl with meat.
Step 10:
Add black pepper to taste and mix all the ingredients well in a bowl.
Step 11:
Filter the cooked broth through cheesecloth into a suitable container.
Step 12:
We put chopped boiled quail eggs with carrots in serving molds and pour a little broth into them.
Step 13:
We put the finely chopped meat quite tightly into serving molds, completely fill it with broth and put it in a cool place.
Step 14:
Lay out the sliced meat in suitable large shapes and pour the broth, slightly covering the meat layer, then let it cool in a cool place.
Step 15:
Spread the boiled quail eggs cut in half with chopped carrots on top of the cooled meat layer, add parsley, then pour the second layer of broth and put it in a cool place.
