No-Bake Chocolate Banana Icebox Cake in 15 Minutes
A chocolate cookie cake with glaze makes a fantastic dessert. This no-bake cake turns out every bit as good as one you'd bake, and the flavor is spot-on. It takes hardly any time — you just cook the custard, make the glaze, and assemble the cake; then it needs a little time to soak. No oven required. Enjoy with a cup of tea!

Step 1:
Make the custard. Rinse a saucepan with cold water, pour in the milk, and add the sugar. Set it over medium heat and warm it, stirring occasionally, until the sugar dissolves. Don't let it boil — the milk just needs to get hot. This takes about 5 minutes.

In a separate bowl, crack in the eggs and add the sifted flour.

Beat with a mixer on low speed until there are no flour lumps.

Gradually ladle the hot milk into the egg mixture, stirring with a spoon or silicone spatula. Return the mixture to the saucepan, stir, and set it over low heat.

Cook over low heat, stirring constantly, until thickened — about 5–7 minutes. Turn off the heat and let the custard cool.

While the custard cools, beat the softened butter with a mixer.

Add the cooled custard to the butter and mix well with the mixer on low speed. The filling is ready.

Peel the bananas and cut them into thin slices.

Now assemble the cake. I used a small rectangular tray. Lay the cookies in a single layer to fill the bottom, breaking them with a knife where needed to fit.

Spread the first layer of cookies with the filling — a silicone brush works well for this.

Arrange the banana slices on top.

Spread with more filling. Build it up in layers this way: cookies, filling, bananas, filling, and a final fourth layer of cookies and filling.

Make the glaze. Combine the cocoa and sugar in a small saucepan and pour in the milk. Cook over low heat, stirring constantly, until thickened — about 7 minutes. Take it off the heat, stir in the butter, and the glaze is ready.

Pour the hot glaze over the cake. Refrigerate it for 2.5 hours to let it soak and set.
