Classic Siberian Okroshka with Ham

Step 1:
We're making a classic summer okroshka with a special twist. Gather everything you need and start by hard-boiling three eggs and 200 g (about 7 oz) of potatoes.

Step 2:
Finely dice 200 g of fresh cucumbers and put them in a roomy bowl.

Step 3:
Finely dice 200 g of radishes too and add them to the cucumbers.

Step 4:
Finely dice the boiled potatoes and add them to the bowl.

Step 5:
Dice 200 g of ham and add it to the vegetables.

Step 6:
Finely chop 200 g of green onion, dill, and parsley and add them to the bowl.

Step 7:
Grate the boiled eggs on the coarse side of a grater and add them to the ham and vegetables.

Step 8:
Mix all the ingredients together thoroughly in the bowl.

Step 9:
Divide the chopped vegetables and ham among bowls and add mustard, sour cream, and salt to taste. Into one bowl, pour homemade kvass.

Into the second bowl, along with mustard, sour cream, and salt, pour kefir thinned with mineral water to taste.
