  • The salad comes out delicious and beautiful, yet it uses the most ordinary, budget-friendly ingredients — a big plus. Instead of the usual Olivier, Mimosa, or Herring Under a Fur Coat, you can put together this layered salad. So, what do you need? First, cooked meat — pork here (though boiled beef, chicken, or turkey works just as well, really any meat you like). So poach the meat ahead of time and cool it to room temperature. Also cook the onion and carrot in advance: boil them whole, skins on, after washing off any dirt — put them in a suitably sized pot, cover with water, cook until tender, then cool and drain. Now peel the potato and carrot and grate them coarsely into separate bowls. Cut the cooled meat into small pieces into its own bowl. Peel and finely chop the onion, scald it with boiling water, drain, and let it cool. Grate the hard cheese on the medium or coarse side. Cut the pickles into small cubes. Now for the most rewarding and fun part — assembling the salad. You can build it in a pretty deep bowl, ideally with glass sides so the layers show, or on a flat serving plate as in the photo, or use a ring mold for individual portions. Here we go: spread the bottom of the dish with mayonnaise and lay down the potato as the first layer, then spread it with mayonnaise. Add the meat and spread with mayonnaise again. Next comes the onion plus mayonnaise. Then a layer of pickles topped with mayonnaise. Finally, mound the carrot in the center with grated cheese around the edges. All that's left is to garnish to taste and refrigerate for a couple of hours (or longer) to chill and let the flavors meld.
