Pork Cheeks Cooked in Onion Skins

- Rinse the onion skins in cool water to wash off any dust and dirt. Put them in a pot and cover with clean water. Cover and bring to a boil, then lower the heat and simmer the onion skins until the water turns a deep brown. 2. Rinse the pork cheek well and pat it dry with paper towels. Lower it into the pot of brown onion water. Add salt, the bay leaf, and the peppercorns. Cover and simmer the cheek over low heat for about 40–50 minutes. 3. Take the cooked cheek out of the pot and rinse off any onion skins clinging to it. The pork will have taken on a lovely amber color, like smoked bacon. Set it on a plate and let it cool. 4. While the meat cools, heat the oven to 350–400°F (180–200°C). 5. In a small bowl, mix the salt, freshly ground black pepper, and other seasonings that pair well with pork (khmeli-suneli, paprika, thyme, and so on). Once the cheek has cooled, rub the seasoning blend all over it. 6. Peel the garlic, separate the cloves, and cut them into slivers. Using a sharp knife, make small slits along the cheek and tuck the garlic slivers inside. Add more garlic if you like a sharper flavor. 7. Place the garlic-studded, spice-rubbed cheek on a baking sheet or in a baking dish of the right size, and put it in the heated oven for about 20 minutes. In that time, the already-cooked meat will take on a beautiful, appetizing brown color and the aroma of fancy smoked meats. Take it out, transfer the roasted pork cheek to a plate, and let it cool. Then it's ready to enjoy!
