Pasta with Ostrich

- Set a large pot of water over high heat; once it boils, reduce it to medium. Add the pasta and cook it according to the package directions (8–12 minutes), just to al dente — not fully soft. Drain the pasta and set it aside. Be careful not to overcook it, or you'll hurt both the look and the taste of the finished dish. 2. Peel the onion and cut it into small cubes. 3. Set a skillet over high heat, add the olive oil, and get it good and hot. Add the onion and fry, stirring, for 2 minutes. 4. Rinse the ostrich fillet, pat it dry, and add it whole to the onion. Sear it for 3 minutes per side, then transfer it to a large plate and set it aside. 5. Add the canned tomatoes, chili sauce, sugar, and kale (or broccoli) to the skillet and stir everything together. 6. Pour in the red wine and apple juice and scatter in the pomegranate seeds. Reduce the heat to medium and cook everything together, stirring occasionally, for 5 minutes. 7. Add the pasta to the skillet and toss so the sauce coats it evenly. 8. Cut the ostrich into large pieces, add it back to the skillet, and toss everything again. Warm it all through for a minute. 9. Without delay, divide the dish among serving plates and bring it to the table. Enjoy — and happy cooking!
