- Tapioca pearls are little starchy balls made from the root of the cassava plant. Once cooked, they turn soft and chewy, almost like gummy candy. Tapioca is nourishing, wholesome, tasty, and honestly a little bit fun to eat. It's hugely popular across the tropics—in South America, East Asia, and the islands. The pearls go into all kinds of dishes, mostly desserts. The most famous of all is bubble tea, sipped through a fat straw and made in countless variations. Today, though, we're making a hearty, tasty breakfast: porridge—an ordinary (and at the same time anything but ordinary) bowl of porridge :) Let's get started: 1. Pour the coconut milk and soy milk into a small saucepan. You can make your own coconut milk or use canned. 2. Add the sugar and stir. You can skip the sugar altogether and instead sweeten the porridge with fresh berries or fruit stirred in at serving time. 3. Set the pan over medium heat, add the shredded coconut and tapioca pearls, and stir. Bring to a boil, then lower the heat to its minimum and cook the porridge for about 10 minutes, stirring now and then. It may take a touch more or less time—the pearls are done when they turn almost completely translucent. 4. Let the porridge cool slightly, then spoon it into bowls and top however you like: fruit, berries, chopped nuts, grated chocolate, dried fruit, and so on. You can also drizzle it with honey or maple syrup or add a spoonful of jam (in which case it's best to leave out the sugar while cooking). Serve warm. Enjoy!
