Chicken and Funchosa Salad with Soy Dressing

    1. Place the funchosa in a bowl and cover with hot water. Let it sit for about 5 minutes — the noodles will soften but stay al dente. Drain, then spread the noodles on a paper towel to dry. 2. Bring a saucepan of water to a boil. Add the chicken and cook for 7–10 minutes, then remove it from the pan. Let the breast cool slightly, then slice it into thin strips. 3. Peel and rinse the carrot. Rinse the cucumber and trim both ends; if it's a young cucumber, you can leave the skin on. Shred the carrot and cucumber on a julienne (Korean-style) grater — a regular vegetable peeler works just as well for thin ribbons. 4. Peel the onion and slice it into the thinnest possible slivers; a sharp knife makes quick work of this. 5. Toast the sesame seeds in a dry skillet (no oil) for 2–3 minutes, until fragrant and golden brown. 6. Make the dressing: in a small bowl or saucepan, combine the soy sauce, vinegar, and chicken broth (the poaching liquid from the chicken works great). Stir in the sugar, sesame paste, sesame oil, and vegetable oil. Season with the hot pepper and whisk to combine. 7. In a large salad bowl, add the funchosa, chicken, carrot, cucumber, and onion. Pour the dressing over everything and toss to coat. 8. Serve, sprinkled with the toasted sesame seeds. And that's it — your dish is ready. Enjoy!
