- First, cook the sago. Sago is a starch-based pearl traditionally made from the sago palm, though tapioca pearls made from cassava (or even potato starch) work just as well. Put the sago in a saucepan and cover with water by about 1 inch (2–3 cm). Set it over medium heat, and once it boils, lower the heat to a minimum. Cook for 10 minutes, stirring now and then so the pearls don't stick to the bottom. After 10 minutes the sago will be translucent with a few small white centers. Turn off the heat and cover the pan (if you're using an electric stove, take the pan off the burner). Let it sit, covered, for 15 minutes — it will finish cooking and turn completely clear. Drain the sago in a sieve and rinse with cool water, then put it in a bowl, cover with cold water, and set aside until needed. Now move on to the pumpkin: peel it and cut it into thin pieces. Put the pumpkin in a saucepan, cover with water, and add the sugar. Bring to a boil over high heat, then lower the heat and cook until soft, 10–15 minutes. Let the cooked pumpkin cool a little and mash it with a potato masher — don't drain the syrup. (You can also blend it until smooth and creamy.) Drain the sago and stir it into the pumpkin. If the mixture is too thick, add a little water and stir again; if it's too thin, drain off the excess. Divide the pumpkin-and-sago mixture among serving bowls, top with pomelo, and add a scoop of ice cream. Serve right away. It's unusual and delicious!
