Pickled Slippery Jack Mushrooms in Jars

These mushrooms come out really tasty and crisp. They're pretty easy to make — except for the cleaning. This marinade works for all kinds of wild mushrooms. (Slippery jacks, or "maslyata," are a type of bolete mushroom.)

Cooking method

    Clean, wash, and boil the mushrooms (about 30 minutes), skimming off the foam. Drain them in a colander and rinse well again.

    Start the marinade. Add all the spices except the vinegar. Once the marinade comes to a boil, add the mushrooms.

    After it returns to a boil, cook for 30 minutes, add the vinegar, and cook for another 5 minutes.

    Pack into a sterilized jar, seal it, and wrap it up.
