Pasta with Tuna, Cherry Tomatoes, and Basil
A tasty, hearty lunch in just 20 minutes!!! This recipe is a real lifesaver for me — only 20 minutes and a delicious, filling lunch or dinner is on the table. Give it a try; I hope you like it!
Cooking method
-
Step 1:
Ingredients.
-
Step 2:
Start the pasta cooking in plenty of salted water, and meanwhile finely chop the onion and sauté it in olive oil.
-
Step 3:
Chop the chile pepper (use as much as you like) and add it to the onion. Fry for 3–5 minutes.
-
Step 4:
Once the onion is nicely golden, add the tuna (I add it along with its oil) and cook over low heat for a few minutes.
-
Step 5:
Cut the cherry tomatoes into quarters or halves (depending on size) and add them to the pan.
-
Step 6:
Drain the pasta, but be sure to save about 1 cup of the cooking water — you may need it.
-
Step 7:
Add the pasta and chopped basil leaves to the pan, toss, and warm through for a few minutes. If the pasta seems dry, add some of the reserved cooking water.
-
Step 8:
Plate the pasta, sprinkle with Parmesan, and serve. Enjoy!
