Pasta with Tuna, Cherry Tomatoes, and Basil

    Start the pasta cooking in plenty of salted water, and meanwhile finely chop the onion and sauté it in olive oil.

    Chop the chile pepper (use as much as you like) and add it to the onion. Fry for 3–5 minutes.

    Once the onion is nicely golden, add the tuna (I add it along with its oil) and cook over low heat for a few minutes.

    Cut the cherry tomatoes into quarters or halves (depending on size) and add them to the pan.

    Drain the pasta, but be sure to save about 1 cup of the cooking water — you may need it.

    Add the pasta and chopped basil leaves to the pan, toss, and warm through for a few minutes. If the pasta seems dry, add some of the reserved cooking water.

    Plate the pasta, sprinkle with Parmesan, and serve. Enjoy!
