Oatmeal Pancakes with Milk

An unusual recipe for fritters made from wholesome oatmeal porridge — delicious oat pancakes! When I was little, I read a children's magazine called Murzilka. It once ran a wonderful piece — not so much an article as a story — about Hercules, the Greek hero. In it, a father tells his son about Hercules' feats while feeding him "gerkules" porridge (gerkules is the old local name for rolled oats). I'd learned to read early, but I had no idea what gerkules was. I kept begging my mom to make me gerkules porridge, and she'd cook plain oatmeal. I sulked about it for ages — until one day she happened to pick up a box of gerkules oats (back then any grain was hard to find), and once it was empty she just refilled it with regular oats. No difference at all...

  • Take rolled oats and cook them into a porridge: first simmer the oats in water, and once the porridge thickens, pour in hot milk and finish cooking. Just don't forget the salt. Now the key part — don't gobble up the porridge; set it aside to cool. Once it's cooled, you'll turn it into pancakes. Grate an apple on the fine holes of a grater, mix it into the porridge, then add the flour. Taste, and add salt and sugar to suit. Stir well, and you're ready to fry. Drop the batter onto the pan by the tablespoon, and serve with sour cream. That's the whole recipe.
