Cold Kefir Soup with Cucumber and Crab Sticks
This super-healthy chilled soup is a treat in both hot and cool weather. It has a long list of upsides: it's quick and easy to throw together, there's nothing to cook ahead of time, it's packed with vitamins, and it's very low in calories — which makes it a go-to for light days and while you're watching your weight.

Step 1:
For this dish you'll need just a few simple ingredients, all easy to find at any grocery store. Pick the kefir's fat content to suit yourself (kefir is a tangy fermented-milk drink, similar to drinkable buttermilk). Some people like it low-fat; for me, 2.5% is just right — I never use the fat-free kind.

Step 2:
Now let's chop all the ingredients — the main part of the work, and it goes fast. Rinse the green onion, dill, and parsley and chop them with a knife. Wash the cucumber, trim the ends, and grate it on the fine or coarse holes of a grater. Thaw the crab sticks if needed, peel off the wrapper, and cut them into medium pieces. You could also use real crab meat.

Step 3:
With all the prep done, here's how to put the soup together. Take a deep bowl or a small pot and add the grated cucumber.

Add the crab sticks to the cucumber.

Add the chopped herbs.

Pour one cup of chilled kefir over the mixture and stir well.

Salt to taste and stir thoroughly once more.

Ladle the soup into deep bowls and serve right away, or let it sit a little first. Then enjoy its flavor and aroma — most of which comes from the fresh herbs!
