Apple Jam with Lemon and Orange Zest

A traditional recipe with the fragrance of orange zest! For this apple-and-lemon jam you can use any kind of apple — sweet, tart, or somewhere in between — and dial the sweetness up or down just by adjusting the sugar and the amount of citrus.

    How do you make jam with apples and lemon? Gather all the ingredients. You can use any apples — tart or sweet, soft or firm. Wash and dry all the fruit well.

    Cut the apples into slices and remove the cores, seeds, and stems. If you like, you can cut the fruit smaller still.

    Put the sliced apples in a wide basin, sprinkle with sugar, and toss well so every slice is coated. Cover the basin with a towel or lid and leave it for two days in a dark, cool spot. Check the apples now and then during that time and stir them — you want them to release plenty of juice. If that happens before two days are up, move on to the next step.

    After two days, my apples had released their juice and darkened — that's perfectly normal.

    Grate the zest from a washed lemon on a fine grater. You'll need 1 tablespoon of zest.

    Grate the zest from a washed orange as well. You'll need 2 tablespoons.

    Set the basin of apples on the stove and bring to a boil. Then lower the heat and cook for 10 minutes, stirring and skimming off the foam as needed.

    Five minutes before the jam is done, stir in the lemon and orange zest.

    You can seal the jam into jars while it's still hot. First sterilize the jars however you prefer, and boil the lids in water for about 7–10 minutes.

    This apple jam is perfect both as a pie filling and as a sweet addition to your tea.

  • Follow the basic canning rules so your preserve keeps well for a long time and without trouble: wash the fruit thoroughly, even if you're going to peel it; remove any debris, dirt, or soil; discard any spoiled fruit; don't cut back on the preservatives, and follow the tips in the recipe; sterilize the empty jars (10 minutes for 0.5 liter; 15 minutes for 1 liter; 20 minutes for 2 liters; 25 minutes for 3 liters) and boil the lids for 10 minutes; when sealing the jars with a canning tool, make sure the lids fit tightly; and turn the jars upside down to check that the seal holds.
