Chokeberry Jam with Lemon and Vanilla

A unique pairing of berries and fruit gives this jam a special twist! The lemon here softens the astringent bite of the chokeberries, so the finished jam comes out gentler on the palate.

  • Pick over and wash the chokeberries, wash the lemon (peel and all), and run everything through a meat grinder (don't peel the lemon — just cut it up and remove the seeds). Transfer the mixture to a pot (whatever you usually use for jam — a basin or the like). Mix it with the sugar and cook for half an hour. Add the vanilla sugar and cook for another 5 minutes. Then immediately spoon it into prepared jars and seal them for winter.
