  • Of all the home preserves out there, jam is what I have the most experience with. I know how to make all kinds of sweets from countless recipes — fruit, berries, vegetables, even dried fruit. One of the most unusual and pricey, yet truly delicious, is dried apricot jam, and that's the one I'll walk you through. Start by sorting through the dried apricots, putting them in a saucepan, and covering them with cold water. Let them soak for about 15 minutes. Then rinse them three or four times in cold water, cover with fresh water again, and let them stand for about 6 hours. After that, lift out the fruit and cut it into small pieces. Strain the soaking liquid, stir in the sugar, set it over the heat, and cook it into a syrup. Once the syrup has boiled for 5–7 minutes, add the prepared apricots. Then add the zest, cut into thin strips, to the same pan. Cook the mixture for about 15 minutes more, and the jam is ready.
