  • I came across this wonderful Italian citrus marmalade recipe while browsing the internet for something tasty and a little out of the ordinary. I found it — and now I'm passing it along. It's an orange-and-lemon marmalade that Italians typically serve with cheese, where it plays up the cheese's flavor beautifully. The result is stunning, especially alongside a glass of dry red (or white) wine. Wash the oranges and lemons well, then peel them — but don't toss the peels yet. Take the peel from one lemon and one orange and chop it very, very finely. Remove all the seeds from the citrus and cut the fruit into small, neat segments. Tip everything into a roomy pot (along with any juice that's collected) and add the sugar. Stir well. Bring to a boil over very low heat, stirring the whole time. Once it boils, lower the heat even further and keep cooking for about an hour to an hour and a half. Don't step away from the stove — watch it constantly and keep stirring with a wooden spoon. When the time is up and the marmalade has thickened, turn off the heat and let the fragrant mixture cool.
