- Let me share a recipe for the most delicious pear and cinnamon jam, the one my grandmother puts up every summer. Well, let's get started. First, pour about 1 quart (1 liter) of water into a saucepan. A lot of people use water straight from the tap. I'm not one of them, so I'd recommend using filtered water. Bring it to a boil. Wash the lemon, carefully peel off the yellow part of the zest, and squeeze out the juice. Peel the pears and cut each into quarters. To keep the fruit from browning, be sure to soak the cut pears in a bowl with the freshly squeezed lemon juice. Drop the quarters into the boiling water, wait 2 minutes, then drain and let them cool. Cover with the sugar and let stand, covered, for 2 hours. Half the work is done. Next, add about 1¾ cups (0.4 liter) of water, along with the lemon zest, pears, cinnamon, and the syrup that formed from the pear juice and sugar. The jam needs to cook for 45 minutes. Stir it now and then and give the pan a gentle swirl so the mixture doesn't scorch or stick to the bottom. Once the pears turn translucent (toward the end of cooking), remove the cinnamon stick. All that's left is to ladle the jam into clean jars and seal the lids tightly. The result is a wonderful treat for anyone with a sweet tooth. And so, the first pear jam of my life is made—and it turned out beautifully! Give it a try and enjoy!
