Beef Aspic with Onion, Carrot, and Parsley
A strikingly beautiful, elegant dish for a holiday spread! A wonderful New Year's aspic, a recipe straight from the pages of Russian home cooking. A dish like beef aspic will win over plenty of people.
Cooking method

Step 1:
Soak the gelatin in 1 cup of cold water for 1 hour. Cut the beef into pieces, cover with 2 liters of water, and bring to a boil on the stove. Add salt, peppercorns, and a bay leaf, and cook for 1 hour. Cut the cooked beef into small pieces. Strain the broth and let it cool. Boil the carrots in their skins for 30 minutes, then peel and slice them into rounds (you can cut decorative shapes if you like). Cut the onion into rings.

Step 2:
Arrange the meat in aspic molds, then add the carrot and onion. Sprinkle chopped parsley on top. Warm the broth and gradually stir in the gelatin, bringing it almost to a boil but not letting it boil! Pour the broth over the meat and vegetables, let it cool, and refrigerate for 6 hours.
